Will Wood Fire Affect Your Pizza Flavour?

My first guest is my legendary wood supplier Paul from LOVE-LOGS I asked him some questions about wood-fired baking.



Love Logs was launched in August 2020 by Heather and Paul – They Are a brand new business trying to do something different in the firewood industry.

In a nutshell, it’s Planet Friendly Firewood that gives back to the environment, with no plastic. At all. Ever.

They are very passionate about the environment (and almost as passionate about pizza!) and while they are not perfect, they make changes wherever possible – driving less, buying local and avoiding single-use plastic when there’s an alternative. Check their full story here.

High quality firewood emits less pollutantse.


All of their firewood is guaranteed to contain less than 20% moisture content. Logs with low moisture content produce fewer particulate emissions and other pollutants when compared to wetter logs, and they also produce more heat and burn longer so you can use fewer logs.

All of their logs are dried in biomass fuelled kilns - sustainable fuel producing sustainable fuel!


They don't use plastic. At all. Ever!


They choose to ship in 100% recyclable cardboard boxes and use only paper tape to seal them.

They work with all of their suppliers to minimise and, where possible, totally remove any plastic within the supply chain!

They plant two trees for every order


They partner with Eden Reforestation Projects, a registered charity that runs tree planting initiatives around the world. Eden Reforestation Projects take a holistic approach, training locals to plant trees, creating jobs and reducing poverty in areas affected by deforestation.

So, will wood fire affect your pizza taste and flavour?


Paul: 'For a 60 seconds Neapolitan style pizza, really is not in the oven long enough for you to notice the difference over the gas or even electric. But what you will notice is that the oven performs differently... You get a hotter drier heat from a wood flame and I think that you can notice that even in appearance of the pizza and sometimes like a minor taste difference. It's not a wood flavour but it is a difference.'
